I found a neat article that talks about using the tenets of Cellular Automata to create music. For those interested: Cellular automata and music.

As far as rules are concerned, it looks like that depends on the program used to render the music. One of the ways music is created considers every cell in the matrix to be a different pitch, which creates a sort of analog to a piano. Another approach gives every cell a possible 1 or 0 state, and then converts entire rows to binary numbers, and (if necessary, using modulus of 128) uses those numbers to produce MIDI tones.

An example rule produced this matrix after just a few steps, starting with just one filled cell:
